Yesterday was Father’s Day which means, to me, baking things the way Dad likes them rather than the way I always make them. Which is, of course, the way I like them. Yesterday, specifically, this entailed brownies which cannot be eaten with a spoon. (Yes, I like them THAT undercooked.) My go-to recipe for brownies is at Allrecipes (click on the photo to be directed to the recipe) and each time I make them, I do some tweaking.

Based on their previous manifestations, this time I made the following adjustments: doubling the recipe and baking in an 8×8 pan for a much thicker brownie,  reducing the eggs to 3 and substituting oil for butter for a chewier brownie, and simply ignoring the frosting recipe due to overly-obvious honey taste. Instead, I concocted my own from butter, cream cheese, cocoa, confectioner’s sugar, vanilla, sour cream, and cream. The recipe for that is as follows:

  1. Cream butter and cream cheese together
  2. Pour in cocoa and confectioner’s sugar until “it looks right”
  3. Taste, decide it needs vanilla, splash some of that in
  4. Taste again, decide it needs some creaminess, rummage through fridge
  5. Add in whatever strikes your fancy
  6. Repeat steps 3 through 5 until satisfied

Yep. Real technical, there. Thankfully frosting doesn’t have to bake so it’s less about chemicals and more about nomminess. Nomminess? I can do.

After (tearfully) overbaking, I let them cool for about thirty seconds and then hacked them up and glopped on frosting. Dad got mini-M&Ms on his piece for a little crunch and color, and everyone else got enormous glasses of milk. In case you haven’t guessed, the photo above is NOT mine. My brownies do not like to be photographed. They like to be EATEN. Going back to the kitchen to refill my milk, I noticed that the entire tray was gone, save a lonely little piece in the corner. However, due to the nature of the frosting “recipe”, there was still plenty of frosting left. This is why I always start off with less than I think I’ll need–somehow, the bowl just keeps growing.

But the brownies? Next time I will quadrouple and bake in the 9×13. NOM.

Just make sure you have plenty of milk.
